“Homemade” Breakfast Sausage
I think breakfast, well breakfast on school mornings, is probably the most difficult meal for me. Even more so on Monday, when we’re coming off of the weekend. Here’s why: We get up around 5:30 am in our house and I’m no spring chicken, I am tired, but more importantly, I am trying to make a very serious effort to send my kids to school with nutritional food in their bodies. While cereal is the most convenient breakfast, my kids are not going to eat Wheaties or Raisin Bran and I know for a fact that Lucky Charms, while I agree are magically delicious, isn’t going to start their morning off right.
So, while creating the lunch/dinner menu for my family, I went ahead and threw in breakfast as well. I came across this recipe A LONG time ago and never really attempted it, until now. I figured the best way to start off the week was with a pretty hearty breakfast of eggs, sausage, and biscuits. I know I said nutritious and no worries, I threw some broccoli in with the eggs and cantaloupe on the side, you know, to balance out that Grands biscuit.
This recipe really turned out good. It was super easy and I’m willing to bet, you have most of the ingredients in your pantry.

- 1 lb. ground pork
- 1 tsp. kosher salt
- 1 tsp. sage
- 1 tsp. thyme
- 1 tsp. paprika
- 1 tsp. black pepper
- 1/2 tsp. nutmeg
- In a small bowl, add spices and stir together.
- In a medium bowl, add ground pork and spices
- Using your hands, mix spices and pork together.
- For sausage patties, form into equal size patties.
- Pan fry in skillet, on medium-high heat, 3-4 minutes per side or until no longer pink in the center.
- I put this together the night before. I separated my patties with parchment paper and put what I wasn't going to use the next morning in the freezer.

- Instead of making patties, you could always cook this up once mixed together and have sausage crumbles. You could use them for breakfast burritos or even biscuits and gravy (which stomps all over the healthier element we're going for, but hey everything in moderation, right?
